Yes. It can read connected email conversations, extract the order details and check the other records you connect. Missing information can be requested in the same conversation.

Do we need to replace our warehouse or accounting software?

No. Whirl uses the actions supported by your connected tools. If it can't create orders directly in your system, it can prepare order details in a spreadsheet, with your permission.
